Description
Delightful Raspberry Chocolate Truffles combining rich chocolate with fruity raspberry flavor, perfect for gifts or special occasions.
Ingredients
- 3/4 cup + 2 Tbsp heavy cream
- 1 cup good quality semi-sweet or dark chocolate, chopped
- 2 Tbsp unsalted butter, cubed
- 1 Tbsp light corn syrup (optional)
- 1/2 tsp fine salt
- 1/3 cup freeze-dried raspberry powder
- 1 cup semi-sweet or dark chocolate chips (for coating)
- 1 Tbsp vegetable shortening or coconut oil
- 2 Tbsp freeze-dried raspberry powder (for decoration, optional)
Instructions
- Heat the heavy cream in a microwave until just beginning to bubble.
- Pour the chopped chocolate, butter, corn syrup, and salt into the cream; let sit for 1 minute.
- Stir until smooth; reheat if needed.
- Fold in freeze-dried raspberries.
- Cover and let thicken at room temperature for 1 hour, or in the fridge for 30 minutes.
- Scoop out tablespoon-sized pieces and roll into balls.
- Melt the coating chocolate with shortening in the microwave.
- Dip each truffle into the melted chocolate and place on a parchment-lined sheet.
- Garnish with crushed dried raspberries.
- Store in an airtight container at room temperature for 3-4 days or in the fridge for up to 2 weeks.
