Description

Delightful Raspberry Chocolate Truffles combining rich chocolate with fruity raspberry flavor, perfect for gifts or special occasions.


Ingredients

  • 3/4 cup + 2 Tbsp heavy cream
  • 1 cup good quality semi-sweet or dark chocolate, chopped
  • 2 Tbsp unsalted butter, cubed
  • 1 Tbsp light corn syrup (optional)
  • 1/2 tsp fine salt
  • 1/3 cup freeze-dried raspberry powder
  • 1 cup semi-sweet or dark chocolate chips (for coating)
  • 1 Tbsp vegetable shortening or coconut oil
  • 2 Tbsp freeze-dried raspberry powder (for decoration, optional)


Instructions

  1. Heat the heavy cream in a microwave until just beginning to bubble.
  2. Pour the chopped chocolate, butter, corn syrup, and salt into the cream; let sit for 1 minute.
  3. Stir until smooth; reheat if needed.
  4. Fold in freeze-dried raspberries.
  5. Cover and let thicken at room temperature for 1 hour, or in the fridge for 30 minutes.
  6. Scoop out tablespoon-sized pieces and roll into balls.
  7. Melt the coating chocolate with shortening in the microwave.
  8. Dip each truffle into the melted chocolate and place on a parchment-lined sheet.
  9. Garnish with crushed dried raspberries.
  10. Store in an airtight container at room temperature for 3-4 days or in the fridge for up to 2 weeks.
