Description
A quick and healthy chili mac recipe that combines hearty flavors in one easy pot. Perfect for busy dinners.
Ingredients
- 1 lb ground turkey
- 1 can kidney beans, drained
- 2 cups whole wheat pasta
- 1 can diced tomatoes
- 1 cup water or broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 cup shredded cheese
- Greek yogurt, for topping
- Cilantro, for garnish
- Crushed tortilla chips, for topping
Instructions
- In a large pot, cook ground turkey until browned.
- Add kidney beans, canned tomatoes, chili powder, cumin, and water or broth.
- Layer whole wheat pasta on top and do not stir.
- Bring to a simmer and cook for 15 minutes.
- Stir in cheese until melted and gooey.
- Serve hot and top with Greek yogurt, cilantro, and crushed tortilla chips.
Notes
For a thicker chili mac, simmer without the lid for a few additional minutes. Leftovers can be reheated with a splash of broth.
