A quick and easy homemade butter chicken recipe, featuring tender chicken in a rich, velvety sauce bursting with warmth and comfort.
Ingredients
- 1 ½ pounds skinless boneless chicken thighs, cut into bite-sized chunks
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon sweet paprika
- ½ teaspoon curry powder
- 1 tablespoon Greek yogurt
- 3 tablespoons vegetable oil
- 3 tablespoons butter (divided)
- 6 garlic cloves, minced
- 1 medium onion, diced
- 1 15-ounce can tomato sauce
- 1 teaspoon sugar
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 2 cups heavy cream
- ½ teaspoon cayenne pepper (optional for heat)
- 1 teaspoon garam masala
- ½ teaspoon curry powder
- ¼ cup freshly chopped parsley (optional, for garnish)

Instructions
- Start by tossing chicken chunks in a bowl with salt, garlic powder, sweet paprika, curry powder, and Greek yogurt. Let marinate for about 10 minutes.
- In a large skillet over medium heat, add vegetable oil and 2 tablespoons of butter. Once melted, add the marinated chicken and sear for about 5-7 minutes until golden brown.
- Remove the chicken and set aside. In the same skillet, sauté the diced onion until translucent, about 3 minutes. Add the minced garlic and sauté for another minute.
- Pour in the tomato sauce, stir in sugar, salt, and black pepper. Cook for another 2-3 minutes.
- Add the heavy cream and return the chicken to the skillet. Let everything simmer for about 10 minutes. Adjust the seasonings as needed.
- Add the remaining tablespoon of butter, garam masala, and extra curry powder for richness.
- Serve hot, garnished with parsley, alongside naan bread or steamed rice.
Notes
