Description

Pancake Poppers are a fun, bite-sized twist on traditional pancakes, perfect for breakfast or as a snack, customizable with toppings.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • Optional toppings: syrup, fruit, or whipped cream


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, mix milk, egg, melted butter, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Fill each mini muffin cup about 2/3 full with batter.
  6. Bake for 10-12 minutes, or until lightly golden and a toothpick inserted comes out clean.
  7. Let cool slightly and serve with your favorite toppings.

Notes

Do not overmix the batter; it’s okay if there are a few lumps. Experiment with flavors by adding chocolate chips or berries.
