Ingredients
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Optional toppings: syrup, fruit, or whipped cream
Instructions
- Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
- In a bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, mix milk, egg, melted butter, and vanilla.
- Combine wet and dry ingredients until just mixed.
- Fill each mini muffin cup about 2/3 full with batter.
- Bake for 10-12 minutes, or until lightly golden and a toothpick inserted comes out clean.
- Let cool slightly and serve with your favorite toppings.
Notes
Do not overmix the batter; it’s okay if there are a few lumps. Experiment with flavors by adding chocolate chips or berries.
