Description
A rich and creamy potato soup inspired by Outback Steakhouse, featuring tender potatoes, crumbled bacon, and sharp cheddar cheese.
Ingredients
- 4 large potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup sharp cheddar cheese, shredded
- 1/2 cup cooked bacon, crumbled
- Salt and pepper to taste
- Chives or green onions for garnish
Instructions
- In a large pot, combine the diced potatoes, onion, garlic, and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Use a potato masher or immersion blender to mash the potatoes to your desired consistency.
- Stir in the heavy cream, cheddar cheese, and crumbled bacon. Season with salt and pepper, and cook over low heat until heated through.
- Ladle the soup into bowls, garnished with fresh chives or green onions. Serve with crusty bread or a fresh salad.
Notes
For added nutrition, consider throwing in some carrots or celery. Can be frozen for later use.
