Description

A rich and creamy potato soup inspired by Outback Steakhouse, featuring tender potatoes, crumbled bacon, and sharp cheddar cheese.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup cooked bacon, crumbled
  • Salt and pepper to taste
  • Chives or green onions for garnish


Instructions

  1. In a large pot, combine the diced potatoes, onion, garlic, and broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  2. Use a potato masher or immersion blender to mash the potatoes to your desired consistency.
  3. Stir in the heavy cream, cheddar cheese, and crumbled bacon. Season with salt and pepper, and cook over low heat until heated through.
  4. Ladle the soup into bowls, garnished with fresh chives or green onions. Serve with crusty bread or a fresh salad.

Notes
