Description
A hearty and comforting soup that combines all the classic flavors of lasagna, made easily in one pot.
Ingredients
- 1 pound ground beef (or ground turkey)
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 can (15 oz) crushed tomatoes
- 2 cups uncooked lasagna noodles, broken into pieces
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, brown the ground meat with the diced onion and minced garlic.
- Add the crushed tomatoes, broth, and Italian seasoning. Bring to a boil.
- Once boiling, add the broken lasagna noodles. Cook until the noodles are tender.
- Stir in the ricotta cheese and half of the mozzarella cheese until melted and combined.
- Serve hot, garnished with fresh basil and the remaining mozzarella on top.
Notes
For extra flavor, add red pepper flakes or your favorite veggies. For a creamier soup, stir in heavy cream at the end. Adjust seasoning based on preference.
