Description

A hearty and comforting soup that combines all the classic flavors of lasagna, made easily in one pot.


Ingredients

  • 1 pound ground beef (or ground turkey)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 can (15 oz) crushed tomatoes
  • 2 cups uncooked lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. In a large pot, brown the ground meat with the diced onion and minced garlic.
  2. Add the crushed tomatoes, broth, and Italian seasoning. Bring to a boil.
  3. Once boiling, add the broken lasagna noodles. Cook until the noodles are tender.
  4. Stir in the ricotta cheese and half of the mozzarella cheese until melted and combined.
  5. Serve hot, garnished with fresh basil and the remaining mozzarella on top.

Notes

For extra flavor, add red pepper flakes or your favorite veggies. For a creamier soup, stir in heavy cream at the end. Adjust seasoning based on preference.
