Description

A cozy and vibrant dish featuring tender chicken and orzo tossed with vegetables in a tangy balsamic sauce.


Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil, for garnish


Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat until it shimmers.
  2. Add the chicken pieces, seasoning generously with salt and pepper. Cook until golden brown, about 5-7 minutes.
  3. Stir in the diced bell pepper and zucchini, cooking for another 3-4 minutes until softened.
  4. Add orzo pasta and chicken broth, bringing to a gentle boil.
  5. Reduce heat to low, cover, and simmer for 10-12 minutes, until orzo is cooked al dente.
  6. Stir in cherry tomatoes and balsamic vinegar, cooking for another 2-3 minutes.
  7. Remove from heat and top with fresh basil before serving.

Notes

Don’t overcook the chicken and keep the lid on while simmering for best results. Feel free to swap in any seasonal veggies.
