Description

Delicious, moist banana nut bread made with ripe bananas and walnuts, perfect for breakfast or snacks.


Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped walnuts (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
  2. In a large bowl, mix the mashed bananas, sour cream, melted butter, sugar, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the baking soda, salt, and flour.
  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Do not overmix.
  5. Fold in the walnuts if using.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for the best flavor. Can substitute walnuts with chocolate chips or dried fruit.
