Description

Delightful mini cakes that are perfect for celebrations or a sweet treat.


Ingredients

  • 60 g unsalted butter (softened)
  • 70 g granulated sugar
  • 1 large egg (room temperature)
  • ½ tsp vanilla extract
  • 70 g all-purpose flour
  • ½ tsp baking powder
  • Pinch of salt
  • 2 Tbsp whole milk


Instructions

  1. Preheat the oven to 350 °F / 175 °C. Grease and line two 4-inch pans.
  2. Cream the softened butter and sugar together for 2–3 minutes until pale and fluffy.
  3. Beat in the egg and add the vanilla extract, mixing until fully combined.
  4. In another bowl, whisk together the flour, baking powder, and a pinch of salt. Gently fold this dry mixture into the wet batter along with the milk.
  5. Divide the batter evenly between the two prepared pans. Bake for 18–20 minutes or until a skewer inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before turning them out onto a wire rack to cool completely before frosting.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Let come to room temperature before serving.
