A delicious and easy dish combining the flavors of Mexican cuisine, perfect for weeknights or gatherings.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 cup cooked rice
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 1/2 cup sour cream
- 4 flour tortillas
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cooked chicken, black beans, corn, diced tomatoes, cooked rice, taco seasoning, sour cream, and half of the shredded cheese. Mix well.
- Cut the flour tortillas into strips.
- In a greased baking dish, layer half of the tortilla strips on the bottom.
- Spread the chicken mixture on top, then layer the remaining tortilla strips.
- Top with the remaining cheese.
- Bake in the preheated oven for 30 minutes or until bubbly and golden brown.
- Let cool slightly before serving.
Notes
For extra flavor, consider adding diced onions, bell peppers, or jalapeños to the chicken mixture.
