Description

A delicious and easy dish combining the flavors of Mexican cuisine, perfect for weeknights or gatherings.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1/2 cup sour cream
  • 4 flour tortillas
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, black beans, corn, diced tomatoes, cooked rice, taco seasoning, sour cream, and half of the shredded cheese. Mix well.
  3. Cut the flour tortillas into strips.
  4. In a greased baking dish, layer half of the tortilla strips on the bottom.
  5. Spread the chicken mixture on top, then layer the remaining tortilla strips.
  6. Top with the remaining cheese.
  7. Bake in the preheated oven for 30 minutes or until bubbly and golden brown.
  8. Let cool slightly before serving.

Notes

For extra flavor, consider adding diced onions, bell peppers, or jalapeños to the chicken mixture.
