Description

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes
  • 2 cups fresh spinach
  • ½ cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • Salt, pepper, and a pinch of oregano


Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Toss in cherry tomatoes and cook for about 3-4 minutes until softened.
  3. Add chickpeas, stirring well for another 3-4 minutes to infuse flavors.
  4. Add fresh spinach and cook until wilted, about 2-3 minutes.
  5. Sprinkle in feta, lemon juice, oregano, salt, and pepper. Gently toss for another minute.
