- 2 cups mashed potatoes (prepared)
- 1 cup shredded sharp cheddar cheese
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- Oil or cooking spray for frying/baking
Instructions
- Gather all your ingredients in one place for convenience.
- If using fresh potatoes, boil them until fork-tender, then mash with butter and cream until smooth. For leftovers, just reheat until warm.
- In a large bowl, mix warm mashed potatoes with cheddar cheese, eggs, flour, salt, and pepper until well combined.
- Scoop the mixture into golf ball-sized portions.
- Preheat your oven to 375°F (190°C) or heat oil in a deep fryer. Bake the puffs for 20-25 minutes or fry until golden brown and crispy.
- Let the puffs cool slightly before serving them warm.
Notes
For best results, use freshly made or high-quality leftover mashed potatoes. You can also add herbs or spices for extra flavor.
