Description

Ingredients

  • 2 cups mashed potatoes (prepared)
  • 1 cup shredded sharp cheddar cheese
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil or cooking spray for frying/baking


Instructions

  1. Gather all your ingredients in one place for convenience.
  2. If using fresh potatoes, boil them until fork-tender, then mash with butter and cream until smooth. For leftovers, just reheat until warm.
  3. In a large bowl, mix warm mashed potatoes with cheddar cheese, eggs, flour, salt, and pepper until well combined.
  4. Scoop the mixture into golf ball-sized portions.
  5. Preheat your oven to 375°F (190°C) or heat oil in a deep fryer. Bake the puffs for 20-25 minutes or fry until golden brown and crispy.
