Description

A comforting chicken soup with creamy textures and rich flavors, featuring sun-dried tomatoes and Parmesan.


Ingredients

  • 1 lb chicken breast, shredded
  • 4 cups chicken broth
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream (or half and half)
  • ½ cup Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 clove garlic, minced
  • Salt & pepper, to taste
  • 1 tbsp butter


Instructions

  1. Melt 1 tablespoon of butter in a large pot over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  2. Pour in the chicken broth and add chopped sun-dried tomatoes along with Italian seasoning. Simmer for 10 minutes.
  3. Stir in shredded chicken, heavy cream, and Parmesan cheese. Heat until warmed through and creamy, about 5 minutes. Season with salt and pepper to taste.

Notes

Serve hot, garnished with extra Parmesan and fresh basil. Pairs well with crusty bread or a light salad.
