Ingredients
- 2 chicken breasts
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, sauté onion, carrots, and celery until they are soft.
- Add minced garlic and cook for another minute.
- Add the chicken breasts, chicken broth, heavy cream, and dried thyme.
- Bring to a boil, then reduce the heat to a simmer.
- Cook until the chicken is fully cooked, about 15-20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
For a thicker soup, blend part of it with an immersion blender. You can add other vegetables for extra nutrition and flavor.
