Description

A comforting chicken soup with creamy broth and fresh vegetables, perfect for cozy dinners.


Ingredients

  • 2 chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot, sauté onion, carrots, and celery until they are soft.
  2. Add minced garlic and cook for another minute.
  3. Add the chicken breasts, chicken broth, heavy cream, and dried thyme.
  4. Bring to a boil, then reduce the heat to a simmer.
  5. Cook until the chicken is fully cooked, about 15-20 minutes.
  6. Remove the chicken, shred it, and return it to the pot.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

For a thicker soup, blend part of it with an immersion blender. You can add other vegetables for extra nutrition and flavor.
