Ingredients
- 4 chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup sun-dried tomatoes, chopped
- 1 teaspoon Italian seasoning
- 1 cup risoni pasta
- Fresh basil for garnish
- Grated Parmesan cheese (optional)
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook until golden, about 5-7 minutes per side. Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in the chicken broth and heavy cream. Stir well to combine.
- Add sun-dried tomatoes and Italian seasoning. Bring the mixture to a gentle simmer.
- Stir in the risoni pasta and cook for about 10 minutes or until the pasta is tender.
- Return the chicken to the skillet and let it cook in the sauce for another 5 minutes.
- Garnish with fresh basil and grated Parmesan cheese if desired.
Notes
To store leftovers, place the chicken risoni in an airtight container and refrigerate. It lasts up to 3 days but can be frozen for up to a month. Thaw in the fridge before reheating.
