Description

A delightful dish featuring tender chicken, creamy sauce, and flavorful risoni pasta, perfect for family dinners or special occasions.


Ingredients

  • 4 chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1 cup risoni pasta
  • Fresh basil for garnish
  • Grated Parmesan cheese (optional)


Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook until golden, about 5-7 minutes per side. Remove chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Pour in the chicken broth and heavy cream. Stir well to combine.
  5. Add sun-dried tomatoes and Italian seasoning. Bring the mixture to a gentle simmer.
  6. Stir in the risoni pasta and cook for about 10 minutes or until the pasta is tender.
  7. Return the chicken to the skillet and let it cook in the sauce for another 5 minutes.
  8. Garnish with fresh basil and grated Parmesan cheese if desired.

Notes

To store leftovers, place the chicken risoni in an airtight container and refrigerate. It lasts up to 3 days but can be frozen for up to a month. Thaw in the fridge before reheating.
