Ingredients
- 2 large boneless, skinless chicken breasts, sliced thinly
- Salt and pepper, to taste
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional)
- 8 oz pasta (such as penne, rigatoni, or fettuccine)
- A handful of fresh basil leaves, for garnish
Instructions
- Cook the pasta according to package instructions until al dente.
- Season the sliced chicken with salt and pepper.
- In a large skillet, heat olive oil over medium heat and add the chicken. Cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
- In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about 1-2 minutes until fragrant.
- Pour in the chicken broth and bring to a simmer. Add heavy cream and stir to combine.
- Gradually add Parmesan cheese while stirring until sauce is creamy.
- Season sauce with Italian seasoning and crushed red pepper flakes if using.
- Add chicken back to the skillet and stir until well coated in sauce.
- Combine cooked pasta with sauce, mixing everything well.
Notes
Use freshly grated Parmesan cheese for the best flavor. Feel free to customize with added veggies like spinach or mushrooms.
