Description

A creamy and flavorful dish that combines tender chicken, pasta, and sun-dried tomatoes, perfect for romantic or family dinners.


Ingredients

  • 2 large boneless, skinless chicken breasts, sliced thinly
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)
  • 8 oz pasta (such as penne, rigatoni, or fettuccine)
  • A handful of fresh basil leaves, for garnish


Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. Season the sliced chicken with salt and pepper.
  3. In a large skillet, heat olive oil over medium heat and add the chicken. Cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
  4. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about 1-2 minutes until fragrant.
  5. Pour in the chicken broth and bring to a simmer. Add heavy cream and stir to combine.
  6. Gradually add Parmesan cheese while stirring until sauce is creamy.
  7. Season sauce with Italian seasoning and crushed red pepper flakes if using.
  8. Add chicken back to the skillet and stir until well coated in sauce.
  9. Combine cooked pasta with sauce, mixing everything well.

Notes

Use freshly grated Parmesan cheese for the best flavor. Feel free to customize with added veggies like spinach or mushrooms.
