A delightful dish of chicken and creamy sauce combined with pasta, perfect for impressing someone special or enjoying a comforting meal.
Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 8 oz fettuccine or penne pasta
- Fresh basil for garnish
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Season chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove chicken from skillet and set aside.
- In the same skillet, add garlic and sauté for 1 minute. Next, add the sun-dried tomatoes and heavy cream, stirring to combine.
- Reduce heat to low and stir in Parmesan cheese until melted and creamy.
- Slice the cooked chicken and return to the skillet along with the cooked pasta. Toss to combine and heat through.
- Serve hot, garnished with fresh basil.
Notes
For a lighter version, use whole grain pasta or substitute chicken with shrimp. Fresh basil enhances flavor; do not skip the garnish.
