Description

A delightful dish of chicken and creamy sauce combined with pasta, perfect for impressing someone special or enjoying a comforting meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 8 oz fettuccine or penne pasta
  • Fresh basil for garnish


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Season chicken breasts with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove chicken from skillet and set aside.
  4. In the same skillet, add garlic and sauté for 1 minute. Next, add the sun-dried tomatoes and heavy cream, stirring to combine.
  5. Reduce heat to low and stir in Parmesan cheese until melted and creamy.
  6. Slice the cooked chicken and return to the skillet along with the cooked pasta. Toss to combine and heat through.
  7. Serve hot, garnished with fresh basil.

Notes

For a lighter version, use whole grain pasta or substitute chicken with shrimp. Fresh basil enhances flavor; do not skip the garnish.
