Description
A creamy, garlic-infused pasta dish with succulent chicken and sun-dried tomatoes that’s perfect for impressing loved ones.
Ingredients
- 8 oz spaghetti or penne pasta
- 2 boneless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- ½ cup grated parmesan cheese
- ¼ cup fresh basil, chopped
Instructions
- Cook the pasta according to package instructions; once done, drain it and set aside.
- Season the chicken breasts generously with salt and pepper.
- In a large skillet, heat olive oil over medium heat. Add the chicken and cook until it’s golden brown and cooked through, about 6-7 minutes per side.
- Remove the chicken from the skillet and set aside. In the same skillet, sauté minced garlic for about 1 minute.
- Stir in heavy cream, chicken broth, and sun-dried tomatoes. Simmer for about 5 minutes.
- Add grated parmesan cheese and stir until melted.
- Slice the cooked chicken and return it to the skillet. Toss in the pasta and combine everything.
- Garnish with fresh basil and serve hot.
Notes
Consider adding spinach or mushrooms for extra flavor. Taste as you go to adjust seasoning.
