Description
A comforting and creamy soup made with chicken, gnocchi, and spinach.
Ingredients
- 1 lb chicken breast, diced
- 1 package gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups spinach
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- In a large pot, sauté onions and garlic until fragrant.
- Add the diced chicken to the pot and cook until browned.
- Pour in the chicken broth and bring to a boil.
- Stir in the gnocchi and cook according to package instructions.
- Reduce heat and add heavy cream and spinach, stirring until the spinach wilts.
- Season with salt and pepper.
- Serve hot, garnished with grated Parmesan cheese.
Notes
Make sure not to overcook the gnocchi; they should be soft but not mushy. You can customize the recipe by using shrimp instead of chicken or kale instead of spinach.
