Description

A comforting and creamy chicken gnocchi soup packed with flavors, perfect for chilly days.


Ingredients

  • 1 lb chicken breast (boneless, skinless)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 package (16 oz) gnocchi
  • 2 cups spinach (fresh preferred)
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Parmesan cheese for serving (grated)


Instructions

  1. Heat oil in a large pot over medium heat and add the chicken breasts, cooking until browned on both sides. Remove and set aside.
  2. Add chopped onion and minced garlic to the pot and sauté until the onion is translucent.
  3. Pour in the chicken broth and diced tomatoes, stirring well to combine.
  4. Slice the cooked chicken into bite-sized pieces and return to the pot.
  5. Stir in heavy cream, Italian seasoning, salt, and pepper, and let simmer for a few minutes.
  6. Add gnocchi to the soup and cook according to package instructions until they float.
  7. Stir in fresh spinach and let it wilt for a couple of minutes.
  8. Ladle the soup into bowls and sprinkle with grated Parmesan cheese before serving.

Notes

For added flavor, consider using homemade chicken broth. You can customize the dish by swapping chicken for shrimp or adding other vegetables like zucchini.
