Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup sun-dried tomatoes (packed in oil, drained and chopped)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 teaspoons garlic powder
- 1 teaspoon Italian seasoning
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt, pepper, garlic powder, and Italian seasoning. Add them to the skillet and sear until golden brown on both sides.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the sun-dried tomatoes and cream, stirring to combine.
- Bring to a simmer and stir in the Parmesan cheese until melted and smooth.
- Return the chicken to the skillet and coat it with the sauce. Cook for an additional 5-10 minutes until the chicken is cooked through.
- Serve warm, garnished with fresh basil, alongside pasta or crusty bread.
