Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup sun-dried tomatoes, drained
- 3 cloves garlic, minced
- 1 tablespoon Italian seasoning
- Salt to taste
- Black pepper to taste
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Place the seasoned chicken breasts at the bottom of the Crock Pot.
- In a mixing bowl, whisk together heavy cream, chicken broth, minced garlic, grated Parmesan, and sun-dried tomatoes.
- Pour the creamy mixture over the chicken in the Crock Pot, ensuring the chicken is fully covered.
- Set the Crock Pot to low heat and cook for 6-7 hours, or on high heat for 3-4 hours, until the chicken is tender and juicy.
- About 30 minutes before serving, stir the sauce and check its thickness. If it’s too thin, thicken with a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water).
- Use tongs to plate the chicken, then spoon the sauce over the top. Garnish with extra Parmesan and fresh parsley if desired.
Notes
For extra flavor, consider adding herbs like basil or oregano. Be careful not to overcook the chicken; it should remain moist.
