A classic comfort food that warms the heart with tender beef and fresh vegetables, making for a hearty one-pot meal.
Ingredients
- 2 pounds beef chuck, cut into cubes
- 4 carrots, chopped
- 4 potatoes, diced
- 2 parsnips, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides. Remove from the pot and set aside.
- In the same pot, add onion and garlic, sauté until translucent.
- Add the browned beef back to the pot along with carrots, potatoes, parsnips, beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 90 to 120 minutes or until beef is tender.
- Adjust seasoning if necessary and serve warm.
Notes
Serve hot in deep bowls with crusty bread to soak up the gravy. A sprinkle of fresh parsley adds a nice touch! For leftovers, let cool completely and store in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
