Description

A classic comfort food that warms the heart with tender beef and fresh vegetables, making for a hearty one-pot meal.


Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 2 parsnips, chopped
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add the beef cubes and brown on all sides. Remove from the pot and set aside.
  2. In the same pot, add onion and garlic, sauté until translucent.
  3. Add the browned beef back to the pot along with carrots, potatoes, parsnips, beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  4. Bring to a boil, then reduce heat to low and cover.
  5. Simmer for 90 to 120 minutes or until beef is tender.
  6. Adjust seasoning if necessary and serve warm.

Notes

Serve hot in deep bowls with crusty bread to soak up the gravy. A sprinkle of fresh parsley adds a nice touch! For leftovers, let cool completely and store in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
