Ingredients
- 8 large eggs
- 6 strips bacon (chopped)
- 2 medium potatoes (diced)
- 1/2 cup heavy cream
- 1/4 cup fresh chives (chopped)
- 1/2 cup cheddar cheese (grated)
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F.
- Cook bacon in a skillet until crispy, about 5-7 minutes. Remove and set aside on a paper towel.
- Add potatoes to the skillet and cook for 8-10 minutes until golden brown and tender.
- Whisk the eggs with heavy cream along with salt and pepper in a bowl.
