Description

A delicious frittata featuring crispy bacon, tender potatoes, and fluffy eggs, garnished with fresh chives.


Ingredients

  • 8 large eggs
  • 6 strips bacon (chopped)
  • 2 medium potatoes (diced)
  • 1/2 cup heavy cream
  • 1/4 cup fresh chives (chopped)
  • 1/2 cup cheddar cheese (grated)
  • Salt and pepper to taste
  • 2 tablespoons olive oil


Instructions

  1. Preheat your oven to 375°F.
  2. Cook bacon in a skillet until crispy, about 5-7 minutes. Remove and set aside on a paper towel.
  3. Add potatoes to the skillet and cook for 8-10 minutes until golden brown and tender.
  4. Whisk the eggs with heavy cream along with salt and pepper in a bowl.
  5. Pour the egg mixture over the cooked potatoes.
  6. Top with cooked bacon and grated cheddar cheese.
  7. Cook on the stovetop for 3 minutes.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until set and golden brown.
