Ingredients
- 1 lb ground beef
- 4 medium potatoes, sliced
- 1 can cream of mushroom soup
- 1 cup shredded cheese (cheddar or your choice)
- 1 onion, chopped
- 1 cup frozen mixed vegetables (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef and onion until the beef is cooked through. Drain any excess fat.
- In a greased casserole dish, layer half of the sliced potatoes.
- Add the cooked ground beef mixture on top of the potatoes.
- Spread the cream of mushroom soup over the beef layer.
- If using, add a layer of frozen mixed vegetables.
- Top with the remaining sliced potatoes and season with salt and pepper.
- Sprinkle shredded cheese on top.
- Cover with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, until the cheese is golden and bubbly.
- Let it cool for a few minutes before serving.
Notes
Serve hot with a side salad or crusty bread. Optionally, sprinkle fresh herbs like parsley on top before serving.
