Ingredients
- 1 pound ground turkey or lean ground beef
- 1 cup cooked brown rice or quinoa
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 cup black beans, drained and rinsed
- 1 cup corn, fresh, frozen, or canned
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar or cheese blend
- Fresh parsley or cilantro, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium-high heat, brown your ground turkey or beef, breaking it up with a spoon.
- Toss in the diced onion and minced garlic, sauté for about 3 to 4 minutes until the onion turns translucent.
- Add the diced green and red bell peppers and cook for another 5 minutes.
- Mix in the rice/quinoa, drained diced tomatoes, black beans, corn, and spices.
- Transfer the filling to a baking dish or oven-safe skillet and spread it evenly.
- Sprinkle shredded cheese over the mixture.
- Bake for 20 to 25 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh parsley or cilantro and serve.
Notes
You can use leftover grains and customize with different vegetables or proteins as desired.
