Description

A hearty and nourishing taco soup made with lean ground turkey, beans, and vibrant vegetables, perfect for cozy nights.


Ingredients

  • 1 lb ground turkey or chicken
  • 1 can black beans, rinsed and drained
  • 1 can kidney beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 4 cups chicken or vegetable broth
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup corn (optional)
  • Salt and pepper to taste
  • Optional toppings: avocado, cilantro, cheese, sour cream


Instructions

  1. In a large pot, heat a touch of olive oil over medium heat. Brown the ground turkey or chicken.
  2. Add the diced onion and bell pepper to the pot and sauté for about 3-5 minutes.
  3. Stir in the black beans, kidney beans, corn, diced tomatoes, and taco seasoning.
  4. Add the chicken or vegetable broth and bring to a gentle simmer.
  5. Let the soup cook for about 20-30 minutes on low heat, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. Ladle the soup into bowls and top with your favorite garnishes.

Notes

For added creaminess, stir in a splash of cream cheese or Greek yogurt just before serving. This soup can also be made in a slow cooker.
