A hearty and nourishing taco soup made with lean ground turkey, beans, and vibrant vegetables, perfect for cozy nights.
Ingredients
- 1 lb ground turkey or chicken
- 1 can black beans, rinsed and drained
- 1 can kidney beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes
- 1 packet taco seasoning
- 4 cups chicken or vegetable broth
- 1 bell pepper, diced
- 1 onion, diced
- 1 cup corn (optional)
- Salt and pepper to taste
- Optional toppings: avocado, cilantro, cheese, sour cream
Instructions
- In a large pot, heat a touch of olive oil over medium heat. Brown the ground turkey or chicken.
- Add the diced onion and bell pepper to the pot and sauté for about 3-5 minutes.
- Stir in the black beans, kidney beans, corn, diced tomatoes, and taco seasoning.
- Add the chicken or vegetable broth and bring to a gentle simmer.
- Let the soup cook for about 20-30 minutes on low heat, stirring occasionally.
- Season with salt and pepper to taste.
- Ladle the soup into bowls and top with your favorite garnishes.
Notes
For added creaminess, stir in a splash of cream cheese or Greek yogurt just before serving. This soup can also be made in a slow cooker.
