Description

Delicious mini muffins combining the sweetness of pancakes with savory sausage and melty cheese, perfect for breakfast or snacks.


Ingredients

  • 2 cups Kodiak pancake mix (or other protein pancake mix)
  • 1 lb ground sausage, browned and crumbled
  • 2 cups milk (try Fairlife for extra protein)
  • 2 eggs
  • ¼ cup maple syrup
  • 1 cup shredded cheese (cheddar or Colby jack)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Spray a mini muffin tin generously with non-stick cooking spray.
  3. In a large mixing bowl, whisk together the pancake mix, milk, eggs, and maple syrup until smooth.
  4. Gently fold in the crumbled sausage and shredded cheese until just combined.
  5. Fill each muffin cup about three-quarters full with the batter.
  6. Bake for about 15 minutes, or until the muffins are golden and firm to the touch.
  7. Allow to cool for a few minutes before serving.

Notes

These muffins can be stored in an airtight container in the fridge for up to 5 days and freeze well for up to three months.
