A delicious twist on classic lasagna, this High Protein Lasagna Soup is packed with protein and is perfect for a cozy dinner or meal prep.
Ingredients
- 1 lb ground turkey or beef
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 cups cooked pasta (lasagna noodles, broken into pieces)
- 1 cup cottage cheese or ricotta
- 1 cup shredded mozzarella cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot over medium heat, brown the ground turkey or beef with the chopped onion and minced garlic.
- Add the crushed tomatoes, broth, oregano, basil, salt, and pepper; bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Stir in the cooked pasta and cottage cheese or ricotta.
- Allow to heat through for another 5 minutes.
- Serve in bowls topped with shredded mozzarella cheese and garnish with fresh parsley.
Notes
For a thicker soup, add more pasta or reduce the broth. You can swap proteins for ground chicken or a plant-based alternative for a lighter option.
