Description

A delicious twist on classic lasagna, this High Protein Lasagna Soup is packed with protein and is perfect for a cozy dinner or meal prep.


Ingredients

  • 1 lb ground turkey or beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups cooked pasta (lasagna noodles, broken into pieces)
  • 1 cup cottage cheese or ricotta
  • 1 cup shredded mozzarella cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. In a large pot over medium heat, brown the ground turkey or beef with the chopped onion and minced garlic.
  2. Add the crushed tomatoes, broth, oregano, basil, salt, and pepper; bring to a boil.
  3. Reduce heat and simmer for 15 minutes.
  4. Stir in the cooked pasta and cottage cheese or ricotta.
  5. Allow to heat through for another 5 minutes.
  6. Serve in bowls topped with shredded mozzarella cheese and garnish with fresh parsley.

Notes

For a thicker soup, add more pasta or reduce the broth. You can swap proteins for ground chicken or a plant-based alternative for a lighter option.
