Description

A hearty and creamy taco soup packed with protein, perfect for busy weeknights.


Ingredients

  • 1 lb (450g) lean ground turkey or chicken
  • 1 tablespoon olive oil
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1 (14.5 oz) can diced tomatoes
  • 1 (10 oz) can green chilies (optional)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 8 oz cream cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat the olive oil over medium heat. Add in the ground turkey or chicken and let it brown.
  2. Once the meat is cooked through and browned, sprinkle in the taco seasoning, garlic powder, onion powder, cumin, salt, and pepper. Stir well.
  3. Pour in the diced tomatoes, green chilies (if using), black beans, and chicken broth. Stir and let it bubble.
  4. Bring the pot to a simmer and add the cubed cream cheese, stirring until melted.
  5. Add shredded cheddar cheese and stir until melted and smooth.
  6. Serve hot, garnished with sour cream, cilantro, and lime if desired.

Notes

Feel free to adjust spices or add extra toppings as desired. This soup can be frozen for up to 3 months.
