Ingredients
- 8 oz penne pasta
- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes (with juices)
- 1 cup low-sodium beef broth
- 1/2 cup plain Greek yogurt
- 1/4 cup grated Parmesan cheese
- 1 tbsp Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
- Olive oil (for cooking)
Instructions
- Cook the penne pasta according to package instructions in salted boiling water. Drain and set aside.
- In a large skillet, heat olive oil over medium heat and sauté chopped onion and minced garlic until fragrant and golden, about 4-5 minutes.
- Add lean ground beef and cook until browned and cooked through, about 6-7 minutes.
- Stir in diced tomatoes and beef broth, followed by Greek yogurt, Parmesan cheese, Italian seasoning, salt, and pepper. Simmer until heated through.
- Add cooked penne to the skillet and toss to coat well with the sauce. Garnish with fresh basil or parsley before serving.
