Description

Delicious and filling high protein burritos made with pulled chicken, fajita veggies, and creamy green chile cheese sauce, wrapped in soft tortillas.


Ingredients

  • 2 cups pulled rotisserie chicken
  • 1 cup fajita veggies (bell peppers and onions)
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup green chile cheese sauce
  • 4 large tortillas
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. Heat your skillet over medium heat and add a drizzle of olive oil.
  2. Toss in the fajita veggies and sauté until softened, about 5-7 minutes.
  3. Stir in the pulled rotisserie chicken, black beans, and corn. Season with salt and pepper, and cook until warmed through.
  4. Lay out the tortillas and spoon the chicken mixture down the center of each one.
  5. Drizzle green chile cheese sauce over the top.
  6. Fold the tortillas tightly to wrap everything in.
  7. For optional crisping, heat the wrapped burritos in the skillet until golden and crispy on all sides.
  8. Serve warm and enjoy!

Notes

Prep the filling ahead of time and store in the fridge for up to 3 days. These burritos can also be frozen for up to 3 months.
