Description

A healthy and flavorful Greek chicken bowl with tzatziki, perfect for quick dinners and meal prep.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 cup Greek yogurt
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, sliced (optional)
  • 2 tablespoons fresh dill (optional)
  • 2 cups brown rice or quinoa
  • Feta cheese (optional)


Instructions

  1. In a zip bag, combine chicken, Greek yogurt, olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate in the fridge for at least 30 minutes.
  2. While the chicken is marinating, chop the cherry tomatoes, cucumber, and red onion.
  3. To make tzatziki, mix together plain yogurt, shredded cucumber, garlic, lemon juice, and dill in a bowl. Adjust seasoning to taste.
  4. Grill or bake the marinated chicken until cooked through and juicy.
  5. Prepare brown rice or quinoa according to package instructions.
  6. Assemble bowls with grain base, grilled chicken, veggies, and a generous spoonful of tzatziki on top.

Notes

Feel free to swap out the chicken for grilled tofu or chickpeas for a vegetarian option. Separate toppings for meal prep to keep them fresh.
