Description

Nutritious and delicious muffins packed with whole wheat flour, oatmeal, and protein powder, perfect for breakfast or a snack.


Ingredients

  • 1 cup whole wheat flour
  • 1 cup oatmeal
  • 1/2 cup protein powder
  • 1/2 cup honey or maple syrup
  • 1 cup unsweetened applesauce
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen blueberries


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the whole wheat flour, oatmeal, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the honey, applesauce, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool for a few minutes before transferring to a wire rack. Enjoy!

Notes

Best served warm, can be enjoyed at room temperature. Pair with yogurt or honey for extra flavor.
