Ingredients
- 2 cups cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can green chilies
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- 1 cup Greek yogurt or sour cream (for creaminess)
- Chopped cilantro (for garnish)
Instructions
- In a large pot, sauté onion and garlic until soft.
- Add the shredded chicken, white beans, corn, green chilies, chicken broth, cumin, oregano, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-30 minutes.
- Stir in Greek yogurt or sour cream to add creaminess.
- Adjust seasoning as needed and serve hot, garnished with chopped cilantro.
Notes
Use rotisserie chicken for a quick preparation. Adjust the spices to your taste; add more cumin for a stronger flavor.
