Description
A flavorful and healthy chicken and rice casserole that’s easy to prepare and under 400 calories per serving.
Ingredients
- 2 cups cooked chicken, diced
- 1 cup white rice
- 2 cups low-sodium chicken broth
- 1 cup mixed vegetables (broccoli, carrots, etc.)
- 1/2 cup Greek yogurt
- 1/2 cup shredded cheese (optional)
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C).
- In a mixing bowl, combine cooked chicken, rice, broth, mixed vegetables, Greek yogurt, paprika, salt, and pepper.
- Transfer the mixture to a greased baking dish.
- If using, sprinkle cheese on top.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 10-15 minutes until heated through and golden on top.
Notes
Feel free to substitute chicken with turkey or add your favorite vegetables. This dish can be prepped ahead of time and baked when ready.
