Ingredients
- 2 cups Whole Wheat Pasta
- 1 cup Sharp Cheddar Cheese
- 1/2 cup Low-Fat Cottage Cheese
- 1/2 cup Greek Yogurt
- 1 cup Vegetables (Spinach/Zucchini, chopped)
- 1 tablespoon Butter
- 1 tablespoon Flour
- 2 cups Milk
- Whole wheat breadcrumbs for topping
Instructions
- Boil the whole wheat pasta until just al dente.
- In a pan, melt the butter and whisk in the flour followed by the milk.
- Add sharp cheddar, low-fat cottage cheese, and Greek yogurt, and whisk until the sauce is thick and creamy.
- Toss the cooked pasta in the cheese sauce to coat well.
- Pour the mixture into a casserole dish, top with extra cheese and breadcrumbs.
- Bake in the oven until bubbly and golden.
