Delightful and healthier churro bites made with almond flour and coconut sugar, perfect for satisfying your sweet tooth.
Ingredients
- 1 cup flour
- 1/2 cup almond flour
- 1/4 cup coconut sugar
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup unsweetened applesauce
- 1/4 cup almond milk
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 2 tbsp coconut sugar (for coating)
- 1 tsp cinnamon (for coating)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the flour, almond flour, coconut sugar, baking powder, cinnamon, and salt.
- In another bowl, combine the applesauce, almond milk, melted coconut oil, and vanilla extract.
- Slowly add the wet ingredients to the dry ingredients, stirring until just combined.
- Scoop out small amounts of the dough and roll them into balls.
- Place the balls on the prepared baking sheet and bake for about 15-20 minutes, or until golden brown.
- In a small bowl, mix the coconut sugar and cinnamon for coating.
- While still warm, roll the churro bites in the cinnamon sugar mixture.
- Let cool slightly and serve.
Notes
For a crunchier texture, bake them a few minutes longer. Store leftovers in an airtight container.
