Description

Delightful and healthier churro bites made with almond flour and coconut sugar, perfect for satisfying your sweet tooth.


Ingredients

  • 1 cup flour
  • 1/2 cup almond flour
  • 1/4 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 2 tbsp coconut sugar (for coating)
  • 1 tsp cinnamon (for coating)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the flour, almond flour, coconut sugar, baking powder, cinnamon, and salt.
  3. In another bowl, combine the applesauce, almond milk, melted coconut oil, and vanilla extract.
  4. Slowly add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Scoop out small amounts of the dough and roll them into balls.
  6. Place the balls on the prepared baking sheet and bake for about 15-20 minutes, or until golden brown.
  7. In a small bowl, mix the coconut sugar and cinnamon for coating.
  8. While still warm, roll the churro bites in the cinnamon sugar mixture.
  9. Let cool slightly and serve.

Notes

For a crunchier texture, bake them a few minutes longer. Store leftovers in an airtight container.
