Description

Healthy and delicious Greek Chicken Bowls filled with vibrant flavors, perfect for meal prep.


Ingredients

  • 1 lb chicken breast, diced
  • 2 cups cooked quinoa or rice
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 2 cups spinach or mixed greens
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup Greek yogurt (for tzatziki sauce)
  • 1 cucumber, grated and drained (for tzatziki sauce)
  • 2 cloves garlic, minced (for tzatziki sauce)
  • 1 tbsp olive oil (for tzatziki sauce)
  • 1 tsp lemon juice (for tzatziki sauce)
  • Salt to taste (for tzatziki sauce)


Instructions

  1. In a bowl, toss the diced chicken with olive oil, oregano, salt, and pepper. Cook in a skillet over medium heat until no longer pink.
  2. Prepare the tzatziki by mixing yogurt, grated cucumber, garlic, olive oil, lemon juice, and salt in a bowl.
  3. In serving bowls, layer the quinoa or rice, followed by the cooked chicken, cucumbers, tomatoes, onions, bell pepper, spinach, and feta.
  4. Drizzle with tzatziki sauce before serving.

Notes

For extra flavor, marinate the chicken in olive oil, oregano, and lemon juice for a couple of hours before cooking. You can add olives, artichokes, or avocado for some added variety.
