Healthy and delicious Greek Chicken Bowls filled with vibrant flavors, perfect for meal prep.
Ingredients
- 1 lb chicken breast, diced
- 2 cups cooked quinoa or rice
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red onion, diced
- 1 bell pepper, diced
- 2 cups spinach or mixed greens
- 1/2 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup Greek yogurt (for tzatziki sauce)
- 1 cucumber, grated and drained (for tzatziki sauce)
- 2 cloves garlic, minced (for tzatziki sauce)
- 1 tbsp olive oil (for tzatziki sauce)
- 1 tsp lemon juice (for tzatziki sauce)
- Salt to taste (for tzatziki sauce)
Instructions
- In a bowl, toss the diced chicken with olive oil, oregano, salt, and pepper. Cook in a skillet over medium heat until no longer pink.
- Prepare the tzatziki by mixing yogurt, grated cucumber, garlic, olive oil, lemon juice, and salt in a bowl.
- In serving bowls, layer the quinoa or rice, followed by the cooked chicken, cucumbers, tomatoes, onions, bell pepper, spinach, and feta.
- Drizzle with tzatziki sauce before serving.
Notes
For extra flavor, marinate the chicken in olive oil, oregano, and lemon juice for a couple of hours before cooking. You can add olives, artichokes, or avocado for some added variety.
