Description

Delicious and nutritious Greek Chicken Bowls with marinated chicken, fresh veggies, and creamy tzatziki sauce.


Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup kalamata olives
  • 1 cup quinoa or rice
  • For Tzatziki:
  • 1 cup yogurt
  • 1/2 cucumber, grated
  • 1 clove garlic, minced
  • 1 tablespoon dill
  • 1 tablespoon lemon juice


Instructions

  1. Marinate chicken breasts in olive oil, garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill or bake the chicken until fully cooked.
  3. Prepare quinoa or rice according to package instructions.
  4. Chop fresh vegetables (cucumbers, tomatoes, red onion) and set aside.
  5. To make tzatziki sauce, mix yogurt, grated cucumber, garlic, dill, and lemon juice in a bowl.
  6. Once chicken is cooked and rested, slice it.
  7. Assemble the bowls with quinoa/rice at the base, topped with sliced chicken, fresh veggies, feta, olives, and tzatziki sauce.
  8. Serve warm or store for meal prep.

Notes

For extra flavor, marinate the chicken longer, even overnight. Customize with different vegetables or grains.
