Description
Delicious and nutritious Greek Chicken Bowls with marinated chicken, fresh veggies, and creamy tzatziki sauce.
Ingredients
- 4 chicken breasts
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cucumber, diced
- 2 tomatoes, diced
- 1/2 red onion, thinly sliced
- 1 cup feta cheese, crumbled
- 1/2 cup kalamata olives
- 1 cup quinoa or rice
- For Tzatziki:
- 1 cup yogurt
- 1/2 cucumber, grated
- 1 clove garlic, minced
- 1 tablespoon dill
- 1 tablespoon lemon juice
Instructions
- Marinate chicken breasts in olive oil, garlic, lemon juice, salt, and pepper for at least 30 minutes.
- Grill or bake the chicken until fully cooked.
- Prepare quinoa or rice according to package instructions.
- Chop fresh vegetables (cucumbers, tomatoes, red onion) and set aside.
- To make tzatziki sauce, mix yogurt, grated cucumber, garlic, dill, and lemon juice in a bowl.
- Once chicken is cooked and rested, slice it.
- Assemble the bowls with quinoa/rice at the base, topped with sliced chicken, fresh veggies, feta, olives, and tzatziki sauce.
- Serve warm or store for meal prep.
Notes
For extra flavor, marinate the chicken longer, even overnight. Customize with different vegetables or grains.
