Description

Healthy and flavorful Greek Chicken Bowls with marinated chicken, fresh veggies, and creamy tzatziki sauce.


Ingredients

  • 1 lb chicken breast
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 cucumber, chopped
  • 1 tomato, chopped
  • 1/4 red onion, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp fresh parsley, chopped
  • 1 cup tzatziki sauce (yogurt, garlic, cucumber, dill, lemon juice)


Instructions

  1. Marinate chicken in olive oil, lemon juice, minced garlic, salt, and pepper for at least 30 minutes.
  2. Grill or bake the chicken until fully cooked.
  3. While the chicken cooks, prepare the tzatziki sauce by mixing yogurt, minced garlic, finely chopped cucumber, dill, and lemon juice together.
  4. Chop the fresh veggies (cucumber, tomato, red onion) and set aside.
  5. Once the chicken is cooked, slice it.
  6. Assemble the bowls by adding a base of chickpeas, then topping with sliced chicken, fresh veggies, feta cheese, and a dollop of tzatziki sauce.
  7. Garnish with fresh parsley and serve.

Notes

For the best flavor, marinate the chicken longer than 30 minutes if possible. You can also customize the dish by swapping chicken for grilled shrimp or tofu.
