Description

Comforting garlic butter chicken pasta, perfect for busy weeknights, creamy and flavorful.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • 300 g pasta (penne, fettuccine, or your choice)
  • 2 tablespoons unsalted butter (for sauce)
  • 2 cloves garlic, minced (for sauce)
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon Italian seasoning
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons chopped fresh parsley (plus extra for garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Drain and set aside, reserving about 1 cup of the pasta water.
  2. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, seasoning with salt, pepper, paprika, and garlic powder. Sauté for about 5-7 minutes or until golden brown.
  3. Remove the chicken and set aside. In the same skillet, melt unsalted butter, then add minced garlic. Sauté until fragrant, about 30 seconds.
  4. Pour in the heavy cream and stir to combine, bringing it to a gentle simmer. Add Parmesan cheese and Italian seasoning, stirring until the cheese has melted and the sauce is creamy.
  5. Add cooked chicken back to the skillet along with drained pasta. Toss everything together, adding reserved pasta water if needed. Finish with fresh parsley.

Notes

Make the chicken and garlic ahead of time for quicker preparation. Reserve pasta water to adjust the sauce’s consistency if needed.
