Ingredients
- 1 package puff pastry sheets
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup cream cheese, softened
- 3 large eggs
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
Instructions
- Preheat the oven to 400°F (200°C).
- Roll out the puff pastry and cut it into rounds. Place them on a baking sheet and bake for 15 minutes or until golden brown.
- In a skillet, heat the olive oil and sauté the minced garlic until fragrant.
- Add the chopped spinach to the skillet and cook until it is wilted.
- In a bowl, mix the ricotta cheese, cream cheese, sautéed spinach, and season with salt and pepper.
- Fill the baked puff pastry shells with the spinach and cheese mixture.
- Crack an egg on top of each filled shell, then sprinkle with Parmesan cheese.
- Bake for an additional 10-12 minutes, or until the egg is cooked to your liking.
- Serve warm and enjoy.
Notes
Make sure the puff pastry is fully baked before adding the filling for a nice flaky crust. For added flavor, consider mixing in herbs like basil or thyme.
