Description

A delicious and unique dish combining creamy cheese, fresh spinach, and perfectly cooked eggs in flaky puff pastry, perfect for brunch or special occasions.


Ingredients

  • 1 package puff pastry sheets
  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup cream cheese, softened
  • 3 large eggs
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry and cut it into rounds. Place them on a baking sheet and bake for 15 minutes or until golden brown.
  3. In a skillet, heat the olive oil and sauté the minced garlic until fragrant.
  4. Add the chopped spinach to the skillet and cook until it is wilted.
  5. In a bowl, mix the ricotta cheese, cream cheese, sautéed spinach, and season with salt and pepper.
  6. Fill the baked puff pastry shells with the spinach and cheese mixture.
  7. Crack an egg on top of each filled shell, then sprinkle with Parmesan cheese.
  8. Bake for an additional 10-12 minutes, or until the egg is cooked to your liking.
  9. Serve warm and enjoy.

Notes

Make sure the puff pastry is fully baked before adding the filling for a nice flaky crust. For added flavor, consider mixing in herbs like basil or thyme.
