Description

A quick and customizable breakfast sandwich featuring fluffy pancakes and savory fillings.


Ingredients

  • 1 cup pancake mix (like Bisquick)
  • ¾ cup milk
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 3 tablespoons maple syrup, plus extra for serving
  • 2 tablespoons maple sugar or brown sugar (optional)
  • 4 large eggs
  • Salt and pepper to taste
  • 4 slices American cheese
  • 8 strips bacon, cooked until crispy or 4 breakfast sausage patties
  • Butter or cooking spray for greasing


Instructions

  1. In a medium bowl, whisk together pancake mix, milk, 1 egg, and vegetable oil until just combined. Let batter rest for 5 minutes.
  2. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  3. Use a round cookie cutter or mason jar ring to pour about 3 tablespoons of batter for each pancake. Cook for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes until golden. Repeat to make 8 pancakes.
  4. In the same skillet, crack eggs into ring molds, season with salt and pepper, add a few drops of water, cover, and cook for 1-4 minutes as desired.
  5. Cook bacon until crispy or heat sausage patties until browned.
  6. Assemble the McGriddles by layering a pancake, cheese, egg, bacon or sausage, and another pancake. Press gently.
  7. Brush the tops lightly with warm maple syrup before serving.

Notes

Use ring molds for perfectly shaped pancakes and eggs. Customize with different cheeses or add spices for extra flavor.
