Description
A comforting low-calorie creamy tomato basil soup that’s easy to make and full of flavor.
Ingredients
- 4 cups diced fresh tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk or half-and-half
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- In a large pot, sauté chopped onion and minced garlic in olive oil until soft and fragrant.
- Add diced tomatoes to the pot and stir to break them down over medium heat.
- Pour in vegetable broth and bring to a simmer for about 20 minutes.
- Using an immersion blender, blend the soup until smooth (or transfer in batches to a blender).
- Return the blended soup to the pot, stir in milk or half-and-half, and season with salt and pepper.
- Add fresh basil just before serving.
Notes
Add a pinch of sugar if the tomatoes are too tart, and avoid boiling once the milk is added to prevent curdling.
