Description

A quick and healthy twist on classic shrimp scampi using zucchini noodles instead of traditional pasta.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 medium zucchinis, spiralized
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Parmesan cheese (optional)


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add shrimp and cook until pink and opaque, about 3-4 minutes.
  3. Stir in garlic and red pepper flakes and cook for an additional minute.
  4. Add spiralized zucchini noodles and toss briefly until warmed through, about 1-2 minutes.
  5. Remove from heat and stir in lemon juice. Season with salt and pepper.
  6. Serve immediately, topped with Parmesan if desired.

Notes

For variations, you can add cherry tomatoes, spinach, or a splash of pesto. Avoid overcooking zucchini noodles to maintain their texture.
