Description

Ingredients

  • 1 cup oat flour
  • 1 cup pumpkin puree
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 tsp cinnamon


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix pumpkin puree, eggs, and maple syrup until combined.
  3. In another bowl, combine oat flour, cinnamon, and other dry ingredients.
  4. Mix the wet ingredients into the dry ingredients until just blended; lumps are okay.
  5. Spoon the batter into lined muffin cups and top with pumpkin seeds if desired.
  6. Bake for about 20 minutes, until a toothpick comes out clean.
