A simple and flavorful dish that’s perfect for busy days, featuring tender chicken in a creamy sauce with sun-dried tomatoes and Parmesan cheese.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup sun-dried tomatoes
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a slow cooker, place the chicken breasts.
- In a bowl, mix together sun-dried tomatoes, heavy cream, Parmesan cheese, garlic, Italian seasoning, salt, and pepper.
- Pour the mixture over the chicken in the slow cooker.
- Cover and cook on low for 6-7 hours or on high for 4 hours until chicken is cooked through.
- Serve the chicken topped with sauce and garnish with fresh basil.
Notes
For added flavor, marinate the chicken in Italian dressing for a few hours. You can also add spinach or mushrooms to the sauce.
