A warm, comforting soup that combines all the delicious flavors of traditional lasagna, perfect for busy days.
Ingredients
- 1 lb ground beef or Italian sausage
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 can (15 oz) tomato sauce
- 2 teaspoons dried Italian herbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 oz lasagna noodles, broken into pieces
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- Parmesan cheese for serving
- Fresh basil for garnish
Instructions
- In a skillet, brown the ground beef or sausage with the chopped onion and minced garlic over medium heat until fully cooked. Drain excess fat.
- In a crockpot, combine the cooked meat mixture, crushed tomatoes, broth, tomato sauce, Italian herbs, salt, and pepper.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the broken lasagna noodles.
- In individual bowls, add a scoop of ricotta cheese and a sprinkle of mozzarella.
- Serve hot, topped with grated Parmesan and fresh basil.
Notes
Feel free to use ground turkey or chicken for a lighter option. You can add vegetables like spinach or mushrooms for extra nutrition.
