Description

A warm, comforting soup that combines all the delicious flavors of traditional lasagna, perfect for busy days.


Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 can (15 oz) tomato sauce
  • 2 teaspoons dried Italian herbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Parmesan cheese for serving
  • Fresh basil for garnish


Instructions

  1. In a skillet, brown the ground beef or sausage with the chopped onion and minced garlic over medium heat until fully cooked. Drain excess fat.
  2. In a crockpot, combine the cooked meat mixture, crushed tomatoes, broth, tomato sauce, Italian herbs, salt, and pepper.
  3. Cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, stir in the broken lasagna noodles.
  5. In individual bowls, add a scoop of ricotta cheese and a sprinkle of mozzarella.
  6. Serve hot, topped with grated Parmesan and fresh basil.

Notes

Feel free to use ground turkey or chicken for a lighter option. You can add vegetables like spinach or mushrooms for extra nutrition.
