A comforting slow cooker chili featuring tender chicken, hearty beans, and creamy goodness, perfect for busy days.
Ingredients
- 1 lb. chicken breasts/thighs (boneless, skinless)
- 1 (4 oz.) can diced green chiles
- 1 (15 oz.) can cannellini beans (drained)
- 1 (15 oz.) can great northern beans (drained)
- 2 tbsp cilantro (fresh, chopped)
- 2 tbsp lime juice
- 2 cups chicken broth
- 1 cup onion (chopped)
- 3 cloves garlic (minced)
- 1/2 tsp cumin
- 1/2 tsp oregano (dried)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp chili powder
- 8 oz. cream cheese (softened)
Instructions
- Add all ingredients to your slow cooker except for the chicken and stir to combine.
- Add chicken to the slow cooker and cover with the sauce/bean mixture.
- Cover and cook on low heat for 420 minutes or on high heat for 240 minutes.
- When done, break up chicken with two forks and stir into the chili.
- Serve with sour cream and chips!
Notes
Use a mix of chicken breasts and thighs for maximum tenderness. You can adjust spice levels by adding jalapeños or hot sauce.
